Low Carb for Me!


I'm back on the low-carb wagon after three weeks off, and feeling so much better. (Joint pain is almost gone! Gluten is my joint-pain culprit.)

Made this "break your fast" chocolate pudding last night. It needs to sit overnight in the fridge. I thought, "No way is this five servings, because, really, who eats just 1/2 cup of pudding and is satisfied?" Let me tell you that I am having trouble finishing my four ounces.

It has the craziest ingredients (hard boiled eggs!) and tastes wonderful. I used my Vitamix blender to make it. From the cookbook shown in the picture.

Maria Emmerich is the author. She is a whiz at recipes, and her cookbooks are GORGEOUS. She's an adoptive mama, too, another reason to love her. She and her husband run several Facebook groups that are helpful, and welcoming, if you are interested in support there.

Low Carb Pizza that Tastes Good! Really!

And it has No Soy in it whatsoever.

This is from the Kimkins website.

Crust:
8 oz grated Parmesan cheese
3 eggs
1/4 tsp baking power
2 TBS olive oil
2 TBS grated Mozzarella cheese

Mix these well, spread in a greased pan. This will fit a 10x13 pan or a 12 inch pizza pan.
Bake for 12 minutes at 450* Remove from oven, loosen crust from pan if necessary and add your favorite low-carb toppings. Bake again until your cheese on top is bubbly.

What the crust looks like after baking:
Yum! Mine had 1/4 cup sauce spread all over it, plus mozzarella cheese and Sargento's pizza cheese, plus black olives.
The cooled-down extras ready to be put in ziploc baggies and into the freezer. Freezes well!
